We recently took a group of clients to Boann Distillery, set in Ireland's Boyne Valley.

It’s one of the country’s more interesting family-owned distilleries, blending old-school whiskey-making with some genuinely modern kit to produce their Single Pot Still Irish whiskey.

PRODUCTION PROCESS

The tour started at the beginning, quite literally, with guests walked through the whole production process from the grain right through to the spirit resting in cask. Standing next to Boann’s custom Italian copper pot stills, it’s hard not to appreciate the level of precision that goes into each batch, and guests came away with a much clearer sense of what happens behind the scenes.

HIGHLIGHT

The warehouse was probably the highlight for most people.

Here’s something about standing among the casks, quiet and still, that makes the whole maturation process click in a way a lecture never quite manages. Guests learned how the type of oak and the way it’s treated can completely change the character of the whiskey inside, and it gave everyone a real appreciation for just how much patience this craft demands.

BOANN’S AWARD-WINNING WHISKEYS

To finish, there was a guided tasting of some of Boann’s award-winning whiskeys, led by the team on site. It was a chance to talk through how grain choice, distillation and cask selection all play their part, and to understand why Boann has built such a strong reputation in such a short space of time.
