Crafting Liquid Perfection: Our Gold Award-Winning Journey with JJ Corry

Whisky is more than just a drink – it’s a journey of craftsmanship, patience, and precision. At Tomoka Fine & Rare, we’re passionate about curating and creating exceptional whisky, and our latest collaboration with JJ Corry is proof that dedication to the craft pays off.

An Unforgettable Journey to Ireland

In 2023, Tomoka Fine & Rare founders Jass and Shane embarked on an adventure to the heart of Irish whisky-making. Their destination? The renowned JJ Corry, where they met with owner Louise to craft something truly special. Over a relaxed afternoon lunch, the conversation turned to whisky—its depth, complexity, and the vision they had for their own unique single malt.

With a clear goal in mind, the team delved into an intensive cask-sampling session, searching for the perfect balance of flavour. After careful consideration and numerous tastings, they struck gold—quite literally.

The Perfect Blend

The final blend was a carefully composed mix of:

  • 80% Fino – bringing crisp dryness and delicate nuttiness
  • 15% Moscatel – adding a touch of sweetness and floral elegance
  • 5% Palo Cortado – providing depth and richness, though it had to be dialled back to prevent overpowering the blend

The result? A whisky that Jass and Shane believed to be liquid perfection. And it seems they weren’t the only ones who thought so—at the 2025 World Whiskies Awards, this very creation took home Gold and Category Winner, earning its place among the best.

A Three-Part Whisky Evolution

From the beginning, this project was about more than just a single release. It was about showcasing the transformative power of wood, allowing whisky lovers to experience how cask finishes shape the liquid over time. Thus, a three-part whisky journey was born.

Chapter One: A Limited First Release

The first expression—a small-batch release of just 140 bottles—offered a glimpse into the whisky’s purest form. But this was only the beginning.

Chapter Two: The Oloroso Influence

The remaining liquid was then transferred into an Oloroso cask, where it spent nine months absorbing deep, sherried richness. Released in December 2024, this second chapter was another limited run of 140 bottles, half of which have already been claimed. (You can grab one of the remaining bottles [here].)

Chapter Three: The Grand Finale

Now, the final leg of the journey begins. The remaining whisky has entered its next cask, where it will rest for another nine months, evolving into its ultimate expression. This final maturation will complete the trilogy—three exceptional whiskies, each telling a unique story of flavour, craftsmanship, and time.
