Thomas and Shane, along with members of the Tomoka Fine and Rare team, took a group of clients to Fife in Scotland for a day spent with their casks and a visit to one of Fife’s most exciting new distilleries, InchDairnie.
It started with an early flight north, and by mid-morning we were on the ground in Fife with a packed day ahead.

Our first stop was The Single Cask, where clients saw and tasted from their very own casks. A cask on paper is one thing, but drawing a sample and tasting how the spirit is developing makes it real.
We walked through the warehouse to see the storage conditions first-hand, along with how the cask racking systems work. We also got a glimpse of different sherry casks and saw why they give the spirit such depth of colour and flavour.
Next came a sample of a Linkwood maturing in a red wine cask, one Tomoka has recently offered to clients. At only three years old, it was already delicious.
We were lucky with our timing. The team was bottling a new range of whiskies bound for Ukraine, and our guests were given a tutorial on the bottling process. Then came the tasting itself, which needs no further explanation.
From there we moved on to InchDairnie Distillery, where we were shown around by Ian Palmer, the founder and the mind behind InchDairnie. He took us through the inner workings of the distillery, from its state-of-the-art technology to the environmentally friendly processes it uses to run as efficiently as possible.
Further in, we climbed all the way up to see the stills. We then moved on to InchDairnie’s in-house storage, where casks are palletised and stacked eight high. It’s not for the faint-hearted.

Days like this are why we do what we do. Our clients don’t just own casks; they get to stand in the warehouse, taste the spirit and meet the people behind it. We’ll keep creating opportunities for that kind of access, and we look forward to the next trip.
